Traveling two hours north of Tokyo, to a lesser know city in Japan, only to get on a local train and ride twenty minutes out to the suburbs. What is worth such a detour? This bowl of Tonkosu Ramen... pork bones and meat simmer for days on end in giant pots to make a silky rich broth. A perfectly cooked egg, shredded pork and scallions top springy noodles to make quite possible the best bowl of ramen on earth.
火鳥 HINOTORI. "The Phoenix" in Japanese. This is where I fell in love with yakitori. It is a smokey temple to delicious charcoal grilled meat on a stick. The chicken, the fire and the technique, so simple that it takes true mastery to make it great.
